Slow Cooker Honey Apple Pork Loin for an Autumn Apple Party ...

I think we have established how much I love fall and the bounty of the seasonal harvest, and of course apples are a crucial part of this.

They are a hugely?versatile fruit, shining their goodness through in both savory and sweet dishes, from drinks to desserts, so I was thrilled when Cindy, of Cindy?s Recipes and Writings, announced she was hosting an Autumn Apple Party for this week?s #SundaySupper.

I decided to head to the savory side of the star of this week and bring to you a delicious dish that?is a perfect meal for the season.

This roast is moist and flavorful, and looks to intricate, but is so incredibly easy, because you make it in your slow cooker.

You can tell its going to be beautiful even before you cook it

We loved it so much, in fact, that I have already made this twice, once with a boneless loin roast and once with a loin with ribs attached.

Both were delicious and easy to make. The flavors melded together beautifully and make a gorgeous presentation. And it smells heavenly as you?re cooking it!

The preparation is a perfect portion for serving ? you get pork and apple in every slice! Beautiful flavors, full of comforting, savoriness and sweetness. The onions and thyme just deepen the experience.

If you?ve never tried apples and pork together, now is the perfect time!

Slow Cooker Honey Apple Pork Loin

Ingredients

  • 2-3 pound pork loin, trimmed of any visible fat
  • 1 large onion, sliced thin
  • 1 apple, unpeeled, cored and sliced into wedges
  • 2-3 tbsp honey
  • 2 tbsp dried thyme leaves, or 1/4 cup fresh leaves
  • salt and pepper to taste

Instructions

  1. cut slices into pork about 1 inch apart, but do not slice all the way through the roast
  2. place an apple wedge into each slice
  3. line the bottom of your slow cooker with onion slices
  4. place roast on top of onions
  5. use any leftover apples by dicing them and scattering them around the edges of the roast
  6. drizzle honey over the top
  7. sprinkle with thyme and salt and pepper
  8. cook on low for 5-6 hours
